1 head Bibb or Boston lettuce cleaned and leaves separated
1/2 lb Green beans boiled till tender then chilled
3/4 cups Cherry tomatoes cut in half
1/2 Medium red onion sliced thin
1/2 cup Roasted red peppers chopped
1/2 cup Greek yogurt
1/4 cup Pitted chopped Medjool dates
1/2 cup Olive oil
1 oz Orange juice
1 Tbsp Dijon mustard
Cooking Instructions
Star with the dressing. Place all the yogurt, olive oil, orange juice, dijon mustard and 1/4 cup chopped Medjool dates and a pinch of salt in a blender and process until the dates are finely chopped. Set aside.
Place bibb lettuce leaves around the bottom of 4 salad bowls.
Mix all other salad ingredients and ½ cup dressing in a mixing bowl and season to taste.
Divide Medjool date salad evenly atop the lettuce leaves.
