In a sauté pan over med heat sweat garlic and shallots in vegetable oil. Add chorizo and cook through. Allow chorizo mixture to cool and combine with bacon and cream cheese. Stuff Medjool dates with mixture and then place n refrigerator to chill
Add corn oil to a deep pot and heat over med-high heat to about 275 degrees. Remove Medjool date poppers from the refrigerator, dip in batter and deep fry until golden brown.
Batter for Poppers:
In a large bowl, combine all purpose flour and baking powder. Add egg and soda water and mix until combined and there are no lumps. Do not over mix.
