⅔ cup ¼-inch cubes pitted Natural Delights Medjool Dates
⅔ cup ¼-inch cubes red bell pepper
½ cup sliced green onions
12 small butter lettuce leaves
¼ cup slivered almonds, toasted
Puree all dressing ingredients in a small blender or food processor until smooth. Cover and refrigerate until ready to serve. (May be prepared several days ahead and store tightly covered in the refrigerator.)
Place chicken, dates, bell pepper and green onions in a medium bowl. Drizzle with dressing and toss well to coat.
Spoon equal amounts of chicken mixture into lettuce leaves and sprinkle with almonds.
