Creamy Banana & Medjool Date Ice Cream

After a long week, treat yourself with this deliciously creamy, sugar-free Banana & Medjool Date Ice Cream! You deserve it.

Ingredients

  • Soft Serve Base
  • 3 ripe bananas
  • ½ cup almond or coconut milk
  • 6 Medjool dates, pitted
  • ½ tsp. vanilla
  • Medjool Date Chocolate Sauce
  • 15 each Medjool dates, pitted
  • 1 cup coconut or almond milk, brought to a boil
  • ¼ cup cocoa powder
  • 1 tsp vanilla bean paste
  • Pinch salt

Preparation

Soft Serve Base

Peel and slice bananas into 1-inch slices.

Freeze solid, about an hour.

In a food processor blend all ingredients together using the pulse tab, scrape down sides with a rubber spatula to distribute the ingredients evenly.

Blend until you have a creamy consistency.

Enjoy immediately or store in your freezer in an airtight container. Keeps up to 4 months.

Chocolate & Toasted Almond Dream

Add 2 ½ tablespoons unsweetened cocoa and 1 cup toasted almonds to soft serve base and blend well. Store as directed.

Lime & Coconut Nice Dream

Add fresh zest of 1 lime and ¼ cup shredded coconut to base. Blend well.

Other Additions

Up to ½ cup of your choice (or combo!) cocoa nibs, chocolate covered nuts, peanut butter pretzels, pomegranate seeds & pistachios.

Top with or swirl in chocolate sauce.

Medjool Date Chocolate Sauce

Combine all ingredients in a food processor and blend completely, scraping the sides of the bowl with a spatula.

Serve warm or at room temperature.

Store in refrigerator in an airtight jar for up to six weeks.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
