Medjool Date, Avocado, and Kiwi Salsa on Sea Scallops

 

Ingredients

  • 1 cup Medjool Dates, pitted and chopped
  • 3 Kiwis, peeled and chopped
  • 1 Avocado, peeled and chopped
  • 1/4 cup Red onion, finely chopped
  • 1/4 cup Red bell pepper, finely chopped
  • 2 Tbsp Cilantro leaves
  • 1 Jalapeno, finely chopped
  • 1 Tbsp Lemon juice
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 1 Tbsp Olive oil
  • 1 1/2 lbs Sea Scallops (approx 18 lg scallops)

Cooking Instructions

  1. Combine Medjool Dates, avocado, kiwi, onion, bell pepper, cilantro, jalapeno, lemon juice 1/4 tsp salt and 1/8 tsp pepper in a bowl.
  2. Heat oil in a skillet over medium high heat. Rinse and pat scallops dry with a paper towel, and sprinkle with remaining salt and pepper.
  3. Saute scallops in hot oil for 2-3 minutes on each side or until they are opaque and lightly browned. Serve with salsa.
  4. Garnish with a lemon curl and cilantro leaves if desired.

Serve immediately.
