Medjool Date Honey Glazed Shrimp

 

Ingredients

  • 3 Tbsp Medjool date paste
  • 2 Tbsp Mango puree
  • 1 Tbsp Honey
  • 2 Tbsp Lemon juice
  • 1 Tbsp Garlic powder
  • 2 Tbsp Fresh ginger, grated
  • 2 lbs 16/20 Shrimp, peeled & de-veined
  • 2 Tbsp Vegetable oil
  • Salt & pepper to taste

Cooking Instructions

  1. Make a date paste by pureeing three pitted and chopped Medjool dates in a food processor with a little water.
  2. In a large bowl, add date paste, mango puree, honey, lemon juice, garlic powder and ginger. Mix well to create a marinade.
  3. Add shrimp to bowl and mix until each shrimp is coated with the marinade.
  4. Place in the refrigerator and let the shrimp marinate for 1 hour.
  5. Heat a saute pan over medium heat, add oil and cook marinated shrimp for 2 minutes on each side. Season with salt and pepper to taste.
  6. Serve with your favorite rice or salad.

Serve immediately.
