Gingered Carrot and Medjool Date Salad

Ingredients:

  • 2 tbsp. cider vinegar
  • 2 tbsp. light brown sugar
  • 1 tbsp. olive oil
  • 1 tsp. grated fresh ginger
  • 1/4 tsp. cinnamon
  • 1/8 tsp. salt
  • Pinch cayenne pepper
  • 1 clove garlic, minced
  • 1 lb. carrots, peeled and coarsely shredded
  • 1/2 cup Natural Delights Medjool Dates, pitted and chopped (about 5 dates)
  • 1 tbsp. chopped fresh flat leaf parsley

Preparation:

  1. Whisk together vinegar, sugar, oil, ginger, cinnamon, salt and cayenne in a large bowl.
  2. Stir in carrots and mix well to coat with dressing. Cover and refrigerate for several hours.
  3. Stir in dates and parsley.
