1 Granny Smith apple, cored and cut into ½-inch pieces
1 Tbsp fresh lemon juice
1 cup Natural Delights Medjool dates, pitted and quartered
1 cup celery, diced
1 cup red seedless grapes, halved lengthwise
⅓ cup nonfat plain Greek yogurt
2 Tbsp fresh dill, coarsely chopped
¼ tsp freshly ground nonfat pepper
¼ cup walnut pieces, toasted and chopped
Bring water to a boil, add barley and return to a boil. Reduce heat to low, cover and simmer for about 45 minutes. Remove from heat and allow to rest for 5 minutes. Fluff with a fork and transfer to a bowl to cool completely.
Add apple and lemon juice to barley and stir to combine. Add Medjool dates, celery, grapes, yogurt, dill and pepper; stir until combined evenly.
Cover and refrigerate for at least 30 minutes or overnight to allow flavors to blend. To serve, garnish with walnuts.
