1/4 cup Natural Delights Medjool Dates, pitted and chopped
2 tbsp. orange juice
1 tbsp. Dijon mustard
2 cups Natural Delights Medjool Dates, pitted and chopped
1 head bibb or Boston lettuce, cleaned and leaves separated
1/2 lb. green beans, boiled until tender and chilled
3/4 cup halved cherry tomatoes
1/2 medium red onion, thinly sliced
1/2 cup roasted red peppers, chopped
Salt to taste
Puree all dressing ingredients in a small blender or food processor until dates are finely chopped.
Place lettuce leaves around the bottom of 4 salad bowls. Stir together remaining salad ingredients and 1/2 cup dressing in a large bowl and season with salt. Place equal amounts into each lettuce-lined bowl.
