Medjool Date Apple Salad with Spinach

  • 3 tbsp. extra virgin olive oil
  • 2 tbsp. apple cider vinegar
  • 1 tbsp. Dijon mustard
  •  Salt and pepper to taste
  • 4 cups fresh spinach
  • 1/2 cup Natural Delights Medjool Dates, pitted, halved and sliced
  • 1/2 cup pistachio nuts, chopped
  • 2 radishes, thinly sliced
  • 1 head frisee, cut into bite size pieces
  • 1 apple, cored, halved and thinly sliced
  • 1 pear, cored, halved and thinly sliced
  •  1/2 small red onion, thinly sliced


  1. Whisk together oil, vinegar, onion, Dijon mustard, salt and pepper in a small bowl.
  2. Place remaining ingredients in a large mixing bowl. Drizzle with dressing and toss well to coat.
