3 Tbsp extra virgin olive oil
2 Tbsp apple cider vinegar
2 Tbsp small red onion, diced
1 Tbsp Dijon mustard
½ cup Natural Delights Medjool dates, pitted, cut in ½ then sliced
1 head frisee (or other leafy green), cut into bite size pieces
4 cups fresh spinach
1 apple, cored and thinly sliced
½ cup pistachio nuts, chopped
1 pear, cored and thinly sliced
2 radishes, thinly sliced
Salt and pepper to taste
Mix oil, vinegar, onion and Dijon mustard in a bowl until blended.
Add remaining ingredients to a large mixing bowl and season with salt and pepper to taste.
Toss with dressing and serve.
