Medjool Date Crusted Halibut

  • 1 cup Natural Delights Medjool Dates, pitted (about 10 dates)
  • 1/4 cup pistachio nuts, crushed
  • 1/2 cup bread crumbs
  • 1 tsp. garlic powder
  • 1 lb. halibut, cut into 4 equal pieces
  • Salt and pepper to taste


  1. Make a date paste by placing dates in a glass bowl; add boiling water to cover. Cover with plastic wrap and allow the dates to soften for about 10 to 15 minutes. Remove the Medjool dates and purée in a food processor until smooth. Set aside 3/4 cup. (Reserve any leftover purée for another use.)
  2. Preheat oven to 425°F. Stir together date paste, nuts, breadcrumbs and garlic powder in a mixing bowl, mixing well.
  3. Season fish with salt and pepper and spread date mixture over fish covering the surface. Bake for 10 to 12 minutes.
