Medjool Date Roll

  • 1 lb. Natural Delights Medjool Dates, pitted and chopped
  • 1 large banana, mashed
  • 1 cup mini marshmallows
  • 1 cup chopped nuts (pecans and walnuts are best)
  • 2 cups crumbled graham crackers, plus extra for coating, if desired
  • Whipped cream (optional)


  1. Place all ingredients in a large bowl and mix well with your hands until mixture has a soft dough like texture.
  2. Roll back and forth gently pressing downward and pressing in ends to create a 2 1/2-inch roll, 8 to 10 inches long.
  3. Transfer to a piece of parchment or waxed paper. Roll in additional graham crackers if desired. Chill for several hours and cut into slices. Top with whipped cream, if desired.
