1 large red or yellow onion, sliced into thin rings
1 tbsp. olive oil
1/8 tsp. salt
2 medium pre-made pizza crusts, cut into 4 flat breads (or use flat bread dough)
2 cups shredded part-skim mozzarella cheese
3/4 cup Natural Delights Medjool Dates, pitted and chopped
1 tsp. dried rosemary
Coat the bottom of a large non-stick skillet with olive oil and heat over medium- high until oil is shimmering. Add onions and stir to coat with oil. Spread onions evenly over the pan and let cook for 10 minutes, stirring occasionally. Sprinkle with salt. Cook for 30 minutes to 40 minutes more over low heat, stirring every few minutes until onions are a rich, golden brown color.
Preheat broiler. Place flatbreads on 2 large baking sheets and sprinkle with cheese. Broil for 2 to 4 minutes, just until cheese starts to melt. Top with onions, dates and rosemary, dividing evenly among the flatbreads.
Place back under the broiler for a minute more or until toppings are hot and bread is lightly browned.
