Medjool Dates with Orange and Almond Salad

Ingredients:

2 oranges, peeled and separated into segments

6 Natural Delights Medjool dates, pitted and chopped coarsely

1 pkg almond slices or blanched slivered almonds to taste

 

Preparation:

  1. Simply toss the oranges and Medjool dates together and sprinkle with a few almonds.

  2. For a breakfast salad, add sliced banana and a few chopped strawberries or whole blueberries and top with your favorite yogurt.

  3. As an appetizer salad, add shredded lettuce (we think iceberg goes really well here) and a little fresh blue or goat cheese. Serve with an orange vinaigrette made from the juice of 1 orange, a little Dijon mustard, olive oil and a generous helping of freshly ground pepper. Combine until smooth.

  4. For dessert just add a scoop of your favorite vanilla bean ice-cream and top with a few sprigs of mint. This is deliciously cool after hot Thai curry.
