Peanut Butter, Banana and Medjool Date Pitas


  • 2 whole-wheat pita breads
  • 1½ cup creamy or chunky peanut butter
  • 8 Medjool dates, pitted and chopped
  • 8 tsp honey
  • 2 bananas, peeled and sliced


  1. Cut each pita bread in half, crosswise, to form four pita pockets.
  2. Gently open each pita pocket and spread 1 tablespoon of peanut butter to each of the interior sides.
  3. Top the peanut butter with the chopped dates, which have been evenly divided.
  4. Drizzle 1 teaspoon of honey over each side.
  5. Add the banana slices to each pita sandwich and then gently press the sides together to reform pita pockets.
