1 Granny Smith apple, cored and cut into ½-inch (1 cm) pieces
1 Tbsp (15 mL) fresh lemon juice
1 cup (250 mL) pitted and quartered Natural Delights Medjool Dates
1 cup (250 mL) celery, diced
1 cup (250 mL) red seedless grapes, halved lengthwise
1/3 cup (75 mL) non-fat plain Greek yogurt
2 Tbsp (30 mL) coarsely chopped fresh dill
1/4 tsp (1 mL) freshly ground black pepper
1/4 cup (50 mL) walnut pieces, toasted and chopped
Bring water to a boil, add barley and return to a boil. Reduce heat to low, cover and simmer for about 45 minutes. Remove from heat and allow to rest for 5 minutes. Fluff with a fork and transfer to a bowl to cool completely.
Add apple and lemon juice to barley and stir to combine. Add dates, celery, grapes, yogurt, dill and pepper; stir until combined evenly.
Cover and refrigerate for at least 30 minutes or overnight to allow flavors to blend. To serve, garnish with walnuts.
