Medjool Date and Bibb Lettuce Salad



  • 2 cup Medjool dates pitted and chopped
  • 1 head Bibb or Boston lettuce cleaned and leaves separated
  • 1/2 lb Green beans boiled till tender then chilled
  • 3/4 cups Cherry tomatoes cut in half
  • 1/2 Medium red onion sliced thin
  • 1/2 cup Roasted red peppers chopped
  • 1/2 cup Greek yogurt
  • 1/4 cup Pitted chopped Medjool dates
  • 1/2 cup Olive oil
  • 1 oz Orange juice
  • 1 Tbsp Dijon mustard

Cooking Instructions

  1. Star with the dressing. Place all the yogurt, olive oil, orange juice, dijon mustard and 1/4 cup chopped Medjool dates and a pinch of salt in a blender and process until the dates are finely chopped. Set aside.
  2. Place bibb lettuce leaves around the bottom of 4 salad bowls.
  3. Mix all other salad ingredients and ½ cup dressing in a mixing bowl and season to taste.
  4. Divide Medjool date salad evenly atop the lettuce leaves.

Serve immediately.
