Medjool Date Apple Salad with Spinach

 

Ingredients

  • 3 Tbsp Extra virgin olive oil
  • 2 Tbsp Apple cider vinegar
  • 2 Tbsp Small diced red onion
  • 1 Tbsp Dijon mustard
  • 1/2 cup Medjool Dates, pitted, cut in 1/2 then sliced
  • 1 Frisee, cut into bite size pieces
  • 4 cups Fresh Spinach
  • 1 Apple, cored then, thinly sliced
  • 1/2 cup Chopped pistachios
  • 1 Pear cored thinly sliced
  • 2 Radishes thinly sliced
  • Salt & pepper to taste

Cooking Instructions

  1. Mix oil, vinegar, onion and Dijon mustard in a bowl until blended.
  2. Add remaining ingredients to a large mixing bowl and season with salt and pepper to taste.
  3. Toss with dressing and serve.

Serve immediately.
