Medjool Date Couscous



  • 1/2 cup Medjool dates, pitted and medium diced
  • 1 cup Couscous
  • 1/4 cup Yellow onion, medium diced
  • 1/4 cup Carrot peeled, medium diced
  • 1/4 cup Red bell pepper, medium diced
  • 1 Tbsp Olive oil
  • 1 cup Vegetable stock
  • 1 cup Orange juice
  • 1/4 cup Toasted, sliced almonds
  • 1/2 lb Small diced broccoli
  • 1/4 cup Feta cheese, crumbled
  • Mint sprigs
  • Salt to taste

Cooking Instructions

  1. In a sauté pan over med-high heat the oil. Add the onions, carrots and red peppers sauté for 2 minutes. Remove with a slotted spoon and set aside.
  2. Add couscous and cook for 5-8 minutes.
  3. Add stock and orange juice and bring to a boil.
  4. Add broccoli and season with salt, lower temperature and cover. Simmer for 15-20 minutes.
  5. Remove from heat and fluff with fork, turn into serving dish.
  6. Add sautéed onions, carrots and red peppers and mix. Top with diced Medjool dates and torn mint leaves. Sprinkle with the sliced almonds and feta cheese and serve alone or with your favorite entrée.
  7. You may substitute Quinoa for the Couscous if preferred.

Serve immediately.
