1 cup Natural Delights Medjool Dates, pitted and chopped (about 10 dates)
1/2 cup orange juice
1/4 cup butter
1/4 cup packed brown sugar
1 tbsp. vanilla extract
1 1/2 cups chocolate cookie crumbs
1/2 cup sweetened flaked coconut
2/3 cup granulated sugar
Line a baking sheet with parchment or wax paper.
Bring dates, juice, butter and brown sugar to a simmer over medium heat and cook for about 12 minutes or until very soft and thickened, stirring occasionally. Stir in vanilla; set aside to cool completely.
Stir in cookie crumbs and coconut. Using a rounded 1 tsp. measuring spoon, scoop out mixture and roll into balls.
Place sugar in a shallow bowl. Roll balls in sugar until completely coated and place on prepared baking sheet. Repeat with remaining mixture.
Cover and refrigerate for at least 2 hours or until firm. Package in single layers in an airtight container or cookie tins. May be refrigerated for up to 3 weeks.
