Almond Joy Protein Bars

Ingredients

  • Base Layer
  • 1 cup unsweetened shredded coconut
  • ½ cup coconut yogurt or coconut cream
  • ¼ cup honey or maple syrup
  • Pinch of salt
  • Date Layer
  • 1 ½ cups Coconut Mini Medjools
  • 2 tablespoons coconut oil
  • 1 scoop protein powder
  • 1 tablespoon water
  • Chocolate Layer
  • 1 ½ cups dark chocolate chips
  • 1 tablespoon coconut oil
  • Toppings
  • Flakey sea salt
  • Raw almonds

Preparation

  1. In a large bowl, combine the unsweetened shredded coconut, yogurt or cream, honey or maple syrup, and salt. Mix well until everything is evenly incorporated, and the mixture holds together when pressed.
  2. Line an 8x8 inch baking pan with parchment paper, leaving some overhang on two sides for easy removal later. Press the coconut base mixture firmly and evenly into the prepared pan.
  3. In a food processor or high-powered blender, combine the dates, coconut oil, protein powder and water. Process until a smooth and thick paste forms.
  4. Spread the date paste evenly over the coconut layer.
  5. Place the pan in the refrigerator for at least 2 hours, or until the bars are firm and set.
  6. Cut the bars into desired sizes (around 8-10 bars or any size of your preference).
  7. Melt the dark chocolate in a double boiler or microwave until smooth.
  8. Working with one bar at a time, dip the bar completely into the melted chocolate, coating it evenly.
  9. Place raw almonds on top of the bar. Sprinkle a pinch of sea salt over the top for a sweet and salty contrast.
  10. Place the bars in the refrigerator for at least 30 minutes, or until the chocolate coating hardens and enjoy.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
