Apple Date Focaccia with Caramelized Onions & Goat Cheese

Ingredients

  • Bread
  • 2 cup bread flour
  • 1 tsp instant yeast
  • ½ tsp granulated sugar
  • ½ tsp coarse salt
  • 1 ⅓ cup lukewarm water
  • ¼ cup olive oil
  • Toppings
  • 8 Natural Delights Medjool dates, pitted and chopped
  • 2 SugarBee apples, cut into small chunks
  • 4 tbsp olive oil
  • ¼ cup water
  • 2 red onions, sliced
  • ¼ tsp each cinnamon, cardamom and nutmeg
  • 4 oz plan goat cheese

Preparation

  1. In a bowl mix the flour, yeast, salt and sugar followed by water and 1 tbsp olive oil. The dough will be sticky. Cover and let it sit for 30 minutes.
  2. After 30 minutes, wet your hands and coil fold the dough like shown in the video. Rotate the bowl 90 degrees and repeat. Let it sit for 15 minutes and repeat the coil fold. Then another 15-minute rest and repeat.
  3. After 3 sets of coil folds, cover and let the dough sit for 1 hour.
  4. Meanwhile, make the toppings by sauteing the apples and dates in 1 tbsp olive oil. Add in the spices and water, cover and let it cook for 15 minutes. Turn the heat off and let it cool completely.
  5. Cook the onions in the remaining olive oil on medium heat for about 45 minutes until they are caramelized.
  6. Coat the bottom of a 10x15 pan with the remainder of the olive oil, transfer the dough to the pan and flip it so both sides are coated with olive oil. Gently stretch the dough to fill the pan, and let it rise for 1 hour.
  7. Preheat the oven to 440 degrees F. Top the dough with caramelized onion, date and apple mix and pieces of goat cheese. Bake in the oven for 30 minutes
