Caramelized Date Ice Cream

Vanilla ice cream spun to perfection in the Ninja Creami, topped with golden caramelized Medjool dates — no refined sugar, just naturally sweet goodness. High fiber, low guilt, pure bliss.

Ingredients

  • Ice Cream Base
  • 2 cups of 2% milk
  • 1 scoop vanilla protein powder
  • 1 tbsp beef gelatin
  • Caramelized Dates
  • 4–5 Medjool dates (pitted & chopped)
  • 1 tbs butter or ghee
  • Pinch of sea salt
  • Optional: splash of vanilla or cinnamon for flavor

Preparation

  1. In the Ninja Creami pint container, blend all base ingredients until smooth. Seal and freeze for 24 hours until solid.
  2. In a small pan over medium heat, add butter or ghee. Add chopped dates and sauté for 2–4 minutes until soft and slightly golden.
  3. After 24 hours, take out your frozen pint. Place it in the Ninja Creami and spin using the Lite Ice Cream. Add a splash of milk and re-spin.
  4. Top with the caramelized dates! Serve and enjoy!

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
