Cashew Chicken Stir Fry

YIELD: 3-4 Servings

A quick, healthy weeknight dinner that you can make ahead and eat all week.  

Ingredients

  • Salad:
  • 2 T. of Sesame Oil
  • 1 Small Yellow Onion, Sliced
  • 3 Chicken Breasts, Sliced
  • 1 tsp of Kosher Salt
  • ¼ tsp of White Pepper
  • 3 Cups of Your Favorite Stir Fry Mixed Vegetables
  • ¼ Cup of Lightly Salted Cashews
  • 1/4 Cup Natural Delights® Dates, Pitted and Roughly Chopped
  • Sliced Green Onions for Garnish (Optional)
  • Sauce:
  • 1 T. of Rice Wine Vinegar
  • 3 Tbsp of Smooth Peanut Butter (or nut butter of choice)
  • 2 T. of Soy Sauce
  • 2 T. of Date Paste
  • 1 tsp. of Minced Garlic
  • 2-3 T. Boiling Water

Preparation

  1. In a large wok, heat sesame oil and once heated add chicken. Season chicken with salt and white pepper.
  2. While Chicken starts to brown, make the sauce by adding all of the ingredients to a medium sized bowl. Add boiling water 1 tbsp at a time, mixing until a creamy but not runny texture is achieved.
  3. Once the chicken is fully cooked, add in the onions and allow to cook until slightly translucent and fragrant. Add in your favorite stir fry vegetable mix and cook until veggies are tender and cooked through.
  4. Add in cashews and dates and pour sauce over top. Move mixture around the pan until everything is coated and heated through.
  5. Transfer to a serving bowl and garnish with sliced green onions. Serve with rice, stir fry noodles or enjoy as is!

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
