Creamy Roasted Tomato, Sweet Potato, & Date Soup

This creamy and subtly sweet twist on Roasted Tomato Soup needs to be in your Fall soup rotation! It’s packed with nutrients like fiber, Vitamin A, and potassium, and is the perfect way to kick off the fall season.

Ingredients

  • 1 head of garlic
  • 2 medium sweet potatoes
  • 2 tablespoons of olive oil, divided
  • 5 large tomatoes, quartered 
  • 1 small yellow onion, quartered
  • 10 organic pitted Natural Delights Medjool dates
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon tarragon
  • ⅛ teaspoon thyme
  • 4 cups vegetable broth
  • ¼ cup sunflower seed butter
  • Garnishes of choice: more olive oil, red pepper flakes, green onions, etc.

Preparation

  1. Preheat oven to 425 degrees F.
  2. Prepare the garlic and sweet potatoes. Slice the top off the head of garlic, then drizzle with olive oil and wrap in foil. Prick sweet potatoes in several places with a fork, then rub with a drizzle of olive oil and wrap in foil. Set aside.
  3. Quarter the tomatoes and onions, then add to sheet pan, along with Natural Delights Medjool Dates. Toss with 1 tablespoon olive oil and salt, pepper, Italian seasoning, tarragon, and thyme. Mix until well coated.
  4. Place sheet tray with tomatoes and onions on the middle rack of the oven. Place sweet potatoes and garlic on top rack. Bake for 45 minutes until sweet potatoes are cooked through and tomatoes are slightly charred.
  5. Squeeze roasted garlic out of the pods and add directly to the sheet tray. Scoop sweet potato flesh from skin and add directly to sheet tray.
  6. Working in batches, add half of the roasted vegetables and dates to a high-speed blender, along with 2 tablespoons sunflower seed butter and 2 cups vegetable broth, and blend until completely smooth and creamy. Add soup to large container, then repeat with remaining ingredients.
  7. To serve, garnish with desired toppings, such as spicy chili crunch, green onions, and crackers. Enjoy!

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
