Date Caramel

Plant-based Date Caramel! If you have an abundance of dates at home, try this super simple recipe! It's great with apples, crackers, or on toast.

Ingredients

  • 1 1/2 cups pitted Natural Delights Medjool Dates
  • 1/2 cup almond butter
  • 1 teaspoon vanilla extract
  • 2 Tablespoons pure maple syrup
  • 4 - 5 teaspoons water, as needed
  • Pinch of sea salt

Preparation

  1. Add Medjool dates to a blender and pulse 5 - 6 times to chop up the dates. **If your blender isn't strong, I suggest soaking the dates in hot water for 30 minutes before blending.
  2. Add the remaining ingredients and blend in 30-40 second increments about 4 - 5 times, making sure to scrape down the sides of the blender between blends.
  3. If you desire a thinner consistency, you can add more water by the tablespoon and give it a quick pulse to incorporate and recheck desired consistency.
  4. Keep refrigerated for up to two weeks. Bring to room temperature to serve.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
