Date Kulfi

This creamy Date Saffron Kulfi blends sweet dates, saffron-infused cream, cardamom, and condensed milk into a rich frozen treat, topped with pistachios for a fragrant, indulgent dessert.

Ingredients

  • 1 cup heavy cream
  • 7 oz sweetened condensed milk (about half a can)
  • ¼ cup heavy cream + 10 saffron strands
  • ½ teaspoon ground green cardamom
  • 10 soft dates, pitted and soaked in warm water until soft
  • Chopped pistachios, for garnish

Preparation

  1. Warm ¼ cup of heavy cream slightly (do not boil), then stir in the saffron strands. Let it steep while you prepare the rest of the ingredients.
  2. Drain the soaked dates and blend them into a smooth paste. Add the infused saffron cream to help blend. Then, add the cup of heavy cream and ground cardamom and continue to blend for a minute until the mixture is smooth and thick.
  3. Pour the kulfi mixture into molds or a freezer-safe container. Tap the container to remove air bubbles and add popsicle sticks. Cover and freeze for at least 6–8 hours, or overnight.
  4. To unmold, dip the molds in warm water. Pull the popsicle stick in a twisting motion to release. Garnish with chopped pistachios and serve immediately.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
