Date Sweetened Pumpkin Bars

Ingredients

  • 8-10 Natural Delights Medjool dates, pitted
  • 1 cup rolled oats
  • ½ cup whole wheat flour
  • 2 teaspoons cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • 2 large eggs
  • 1 cup pumpkin puree
  • 3 tablespoons avocado oil
  • 1 teaspoon vanilla extract

Preparation

  1. Preheat your oven to 350°F and line an 8x8-inch baking pan with parchment paper. Place the pitted dates in a bowl and cover them with warm water. Let them soak for about 10 minutes to soften, then drain.
  2. In a blender or food processor, combine the soaked dates, pumpkin purée, eggs, avocado oil, and vanilla extract. Blend until smooth and creamy.
  3. In a large bowl, mix together the rolled oats, whole wheat flour, cinnamon, pumpkin pie spice, baking powder, and baking soda. Pour the wet mixture into the dry ingredients and stir until just combined. The batter will be thick.
  4. Spread the batter evenly into the prepared pan and smooth the top. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean and the top feels set.
  5. Let the bars cool completely before slicing.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
