Frozen Yogurt Bark with Berries

Ingredients

  • 2 cups plain yogurt use dairy-free for paleo or vegan
  • 2 tbsp maple syrup or honey
  • 1 tsp vanilla extract
  • 2/3 cup berries blueberries, blackberries, raspberries, and/or sliced strawberries
  • 1/2 cup Natural Delights® Mini Medjools

Preparation

  1. Line a baking sheet with parchment paper or wax paper.
  2. In a large bowl, stir together yogurt, maple syrup, and vanilla extract until combined.
  3. Pour the yogurt mixture on the prepared baking sheet.
  4. Top with berries and Mini Medjools evenly.
  5. Freeze for 2-3 hours until the center is firm and set.
  6. Cut into slices and serve. Store in the freezer.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
