Grilled Carrots

These savory carrots are grilled until perfectly tender, topped with a delectable mixture of Medjool dates, pistachios and blue cheese, and finally garnished with fresh parsley.

  • 12 carrots, cleaned & halved lengthwise
  • 3 tablespoons olive oil
  • 2 teaspoon seasoned pepper
  • 1 cup Medjool dates, chopped
  • 1/2 cup of pistachios, shelled & chopped
  • 1/3 cup blue cheese crumbles
  • Optional: fresh parsley for garnish


  1. In a medium bowl, combine dates, pistachios, blue cheese, 1 tablespoon of olive oil, and 1 teaspoon of seasoned pepper. Set aside.
  2. Preheat grill to medium heat. Drizzle 2 tablespoons of olive oil onto the carrots, along with 1 teaspoon of seasoned pepper. Cook carrots on both sides for about 4-5 minutes, or until slightly charred and tender. Remove from the heat and transfer to a serving plate.
  3. Top with the date mixture, and garnish with fresh parsley. Enjoy!

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
