Heart Shaped Chocolate Covered Dates

Nothing says "I love you" like a simple, delicious heart shaped chocolate covered date.

Ingredients

  • 8-10 Medjool dates, pitted
  • ½ cup creamy peanut butter or almond butter
  • 1 cup milk or dark chocolate chips
  • 2 tablespoons coconut oil
  • Sprinkles, for topping

Preparation

  1. Pinch the date half gently between your thumb and index finger, bringing the two sides together at the top to form a point. Gently squeeze the bottom of the date to push the flesh upwards, forming a rounded curve.
  2. Melt the chocolate chips and coconut oil together, stirring frequently, until smooth.
  3. Add nut butter to a sandwich bag, then snip the corner off and pipe the peanut butter into each date.
  4. Using a fork or your fingers, dip each date half in the melted chocolate, coating it completely. Tap the fork or your fingers gently to remove excess chocolate.
  5. If you are using any toppings, sprinkle them over the dipped dates immediately before the chocolate hardens.
  6. Place the dipped dates on a parchment-lined baking sheet and refrigerate for at least 30 minutes, or until the chocolate is hardened. Store the dates in an airtight container in the refrigerator for up to a week.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
