1. Pre-heat oven to 120°C.
2. In a large bowl, combine all dry granola ingredients.
3. Melt the coconut oil then whisk together with the date syrup.
4. Pour date syrup over the dry ingredients and stir together until evenly combined. Add a little more syrup to coat thoroughly, if required.
5. Transfer to a lined baking tray and spread evenly using the back of a spoon.
6. Bake for about 15 - 20 minutes, watch the nuts so they don't burn. The granola may still feel a little wet when you remove it from the oven, but it will harden as it cools.
7. Remove from the oven and let cool completely before breaking apart.
8. To finish add fresh chopped dates and store in an airtight container.

The nut and seeds we like to use are: 1 cup raw almonds, ½ cup raw cashews, ¼ cup sunflower seeds, and ¼ cup pepita seeds.
