Panque de Chocolate

Panque de Chocolate is a moist, chocolate bread with zero sugar added, no sweeteners at all — just dates!

Ingredients

  • 1 cup gluten-free flour
  • ½ cup cocoa powder
  • 2 eggs
  • 350g Medjool dates
  • 350g almond milk
  • ½ cup melted coconut oil
  • 1 tsp baking powder
  • Vanilla extract
  • Optional (topping): ¼ cup chocolate chips + ¼ cup walnuts

Preparation

  1. Heat the almond milk and add the dates (remove the pit first). Let it sit for 10 minutes, then transfer to a food processor or blender along with the egg, coconut oil, and vanilla. Blend. Add the mixture to the dry ingredients and combine by hand. Place in a baking dish, add the topping, and bake for 60 minutes at 350°F.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
