Peanut Kale Salad

Enjoy this twist on a classic sweet and savory, Asian-inspired dish. 


  • Dressing:
  • 6 Pitted Natural Delights® Medjool Dates
  • 1 Cup Hot Water
  • 2 T. Toasted Sesame Oil
  • 1/2 Cup Mild Rice Vinegar
  • 1/2 Cup Orange Juice
  • 1/2 Cup Unsweetened Peanut Butter
  • 1 tsp Sea Salt
  • Salad:
  • 9 Natural Delights® Medjool dates, pitted and chopped
  • 2 Bunches Tuscan Kale, Rinsed, Dried and Roughly Chopped
  • 6 Radishes, Thinly Sliced
  • 1/2 Cup Chopped, Salted Peanuts
  • 2 T. Toasted Sesame Seeds
  • 1 Cup Cooked Farro
  • 1 Cup Edamame Beans
  • 1/2 Small Red Onion, Thinly Sliced


  1. In a large mixing bowl, add all the salad ingredients together and gently toss until combined.
  2. Next, add all the dressing ingredients to a jar and use an immersion blender (alternatively, place all ingredients into a blender and process until smooth and silky!)
  3. When ready, pour the dressing over the salad to preference and carefully toss. (Reserve the remaining dressing in an air-tight container to use later.)
  4. Transfer to a serving dish and enjoy!

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
