Ingredients

  • 12 large Medjool dates, pitted
  • ½ cup pumpkin puree
  • 1 tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • ¼ cup almond butter
  • ½ cup chocolate chips
  • ½ tbsp espresso/coffee powder
  • 1-2 tbsp pumpkin seeds
  • 1 tbsp crushed coffee beans
  • Sprinkle of flaky sea salt

Preparation

  1. To a skillet over medium heat, add pumpkin puree, pumpkin pie spice, and vanilla extract. Mix until well combined and most of water has cooked out of pumpkin, about 4-5 minutes.
  2. In a small bowl, mix the pumpkin with almond butter and place in the fridge to cool.
  3. Meanwhile, place your Natural Delights Medjool dates on a sheet of parchment paper in a single layer. Cover with another sheet of parchment and use a rolling pin to flatten them into an even layer. Remove the top sheet and set aside.
  4. Spread the pumpkin mixture evenly over the flattened dates. Place it in the freezer to harden.
  5. In a small, microwave-safe bowl, melt chocolate chips, then stir in the espresso powder. Mix until well combined.
  6. Sprinkle with pumpkin seeds, crushed coffee beans, and flaky sea salt.
  7. Place in the refrigerator until set, at least an hour.
  8. Once firm, remove the bottom layer of parchment paper, and cut into small pieces. Enjoy!

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
