Recipe by Mackenzie Burgess, RDN.

Ingredients

  • 12 Medjool dates
  • 1/4 cup creamy peanut butter
  • 2 tablespoons peanuts, finely chopped
  • 1/2 cup milk or dark chocolate chips
  • 1 teaspoon coconut oil
  • Flakey sea salt

Preparation

  1. Use a knife to make a lengthwise slit down the center of one side of the dates. Be sure to not cut through the other side. Remove and discard the center pit.
  2. Add pitted dates to a sheet of parchment paper on a sheet pan.
  3. Spoon about 1 teaspoon of peanut butter into the center of each sliced date. Then, top each date with about 1/2 teaspoon chopped peanuts.
  4. Next, place chocolate chips and coconut oil in a small bowl and microwave in 30-second intervals until fully melted.
  5. You can use a spoon to gently drizzle the melted chocolate over dates OR you can fully coat the dates in the chocolate by using your hands or a toothpick to dip them. Place the chocolate covered dates back onto the parchment paper.
  6. Sprinkle over a pinch of sea salt before adding the sheet pan to the freezer for 10-15 minutes.
  7. Once the chocolate has hardened, you can enjoy these homemade “Snickers” dates!

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
