Southwestern Salad

  • 4 cups romaine lettuce, chopped
  • 1 15 oz can of black beans, drained and rinsed
  • 1 cup fresh corn
  • 1 cup cherry tomatoes, halved
  • ½ cup avocado, chopped
  • 1 cup chicken, chopped
  • 1 cup Natural Delights Medjool Date Strips with Tajín
  • ½ cup California Walnuts, roasted
  • Lime wedges, for squeezing
  • Chipotle Ranch Dressing
  • ½ cup mayonnaise
  • ¼ cup plain Greek yogurt
  • 1 tablespoon chipotle peppers in adobo sauce, minced
  • ⅓ teaspoon dried dill
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and fresh lime juice (optional), to taste


1. In a large bowl, combine the romaine lettuce, black beans, corn, bell pepper, tomatoes, avocado, chicken, walnuts, and the date strips.

2. In a small bowl, whisk together mayonnaise, Greek yogurt, chipotle pepper, dried dill, garlic powder, and onion powder. Give the dressing a taste and adjust seasonings as needed. You might want to add a pinch of salt, a squeeze of fresh lime juice for acidity, or more chipotle pepper for heat.

3. Drizzle your homemade Chipotle Ranch Dressing all over the salad and mix until well combined. Garnish with fresh cilantro and serve with lime wedges for squeezing extra lime juice on top.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
