Strawberry Coconut Boba Tea

This dairy-free, immune-boosting tea is packed with antioxidants and sweet boba for a delicious treat that tastes as good as it looks.


  • 3 (green tea) tea bags
  • 1 cup hot water
  • 5 pitted medjool dates
  • 1 cup strawberries
  • 4 cups coconut milk (or plant based alternative of choice)
  • 1/2 cup quick cooking tapioca pearls


  1. Steep the green tea bags in water for at least 10 minutes. (Or overnight in the refrigerator)
  2. In a high speed blender combine the dates, strawberries, and plant milk until smooth and consistent.
  3. While the tea is steeping prepare the boba according to the package directions.
  4. Next, divide the cooked tapioca pearls amongst 4 glasses. Pour 1/4 cup prepared green tea into each glass and top with 1/2 cup of strawberry blend then top with ice.
  5. Serve with boba straws (or wide straws that can fit the tapioca pearls).
  6. Enjoy!

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
