Sweet and Spicy Date Bars

  • 1 cup Natural Delights Medjool Date Strips with Tajín
  • ½ cup chopped California Walnuts
  • ½ cup chopped almonds
  • ½ cup pistachios
  • ½ cup peanuts
  • 1 teaspoon cinnamon
  • ½ teaspoon chili powder
  • ½ teaspoon cayenne
  • 1 tablespoon coconut oil
  • ½ cup honey
  • Pinch of salt


  1. Preheat the oven to 300°F. Line a baking sheet with parchment paper.
  2. Mix nuts and date strips in a bowl.
  3. In a small saucepan over medium low heat, warm the coconut oil and honey, about 6-8 minutes. Be careful not to burn and stir frequently. It will foam up as it cooks. Immediately, pour liquid mixture over the dry mixture. Thoroughly toss the mixture with cinnamon, chili powder, cayenne, and salt.
  4. Spread the mixture evenly onto the prepared baking sheet and bake for 20-25 minutes, until golden brown, tossing at the halfway point. Allow for it to cool completely at least 30 minutes, or until hardened (and sticky).
  5. Cut into bars (be sure to do this on parchment paper to prevent sticking) and store in an airtight container.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
