Tahini Date Pie

If you're looking for a new tradition, this one-of-a-kind dessert will become a staple special occasion treat.


  • Crust:
  • 3 Cups Ginger Snap Cookies
  • 3/4 Cup Salted Butter, Melted
  • 1/4 Cup Cacao Powder
  • Filling:
  • 1 Cup Heavy Whipping Cream
  • 1/4 Cup Powdered Sugar
  • 8 Ounces Mascarpone Cheese
  • 1 Cup Smooth Tahini
  • 1 tsp. Vanilla Extract
  • 1/2 tsp. Ground Ginger
  • 1/2 tsp. Freshly Grated Nutmeg
  • 8 Natural Delights® Dates, Pitted and Blended with 1 Boiling Cup Water Until Silky Smooth
  • 1 tsp. Sea Salt


  1. Place ginger snaps into a food processor and blend until it is just crumbs.
  2. Add the crumbs to a large mixing bowl with remaining ingredients and combine until evenly incorporated.
  3. Next, transfer into a 10” tart pan and firmly, yet patiently, press into to form and create the crust. (we like to use the back of a measuring spoon to get it nice, smooth, and even!)
  4. Add the heavy whipping cream and powdered sugar into a large mixing bowl or electric stand mixer. Whisk until soft peeks form (making sure to scrape down the sides of the bowls occasionally), then add the remaining ingredients.
  5. Whisk until everything is evenly combined, fluffy and can hold its own.
  6. Next, transfer to the crust and use a spoon to swirl into place. Finally, sprinkle chocolate curls on top and dig in!

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
