Tajin Pineapple Skewers

These Tajín Pineapple Skewers pair juicy, citrus-kissed pineapple with sweet and tangy Tajín Medjool Dates for a refreshing, flavor-packed snack or party appetizer.

Ingredients

  • 1 ripe pineapple, cored and cut into ½ inch to 1-inch chunks
  • 1-2 tablespoons fresh lime or lemon juice
  • 2-3 tablespoons Tajín Clásico seasoning (or to taste, for extra dusting)
  • 1 package Natural Delights Medjool Dates with Tajín
  • Optional: Lime or lemon wedges, for serving

Preparation

  1. Peel, core, and cut the pineapple into evenly sized chunks. You want them to be roughly the same size as (or slightly larger than) your date pieces for easy skewering.
  2. Place the pineapple chunks in a medium bowl. Squeeze fresh lime or lemon juice over the pineapple and toss gently to coat. Sprinkle 2-3 tablespoons of Tajín Clásico seasoning over the pineapple and toss again until the pieces are well coated.
  3. Carefully thread alternating pieces of the seasoned pineapple and Natural Delights Medjool Date Strips with Tajin onto your skewers. Aim for 3-4 pieces of each per skewer, depending on the length.
  4. For best flavor and a firmer texture, place the assembled skewers on a platter or plate and chill in the refrigerator for at least 15-30 minutes before serving.
  5. Arrange the Tajín Pineapple & Date Skewers on a serving platter. Serve immediately, optionally with fresh lime or lemon wedges for an extra burst of zest.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
