Ingredients

  • Talbina
  • 1/3 cup barley flour
  • 2 cups milk
  • 1/2 tsp ground cinnamon
  • 1 tsp ghee
  • Date & Nut Topping
  • 1/2 cup Natural Delights Medjool dates, diced
  • 1/4 cup walnuts, chopped
  • 1/4 cup pistachios, chopped
  • Optional Toppings
  • Sprinkle of black nigella seeds
  • Drizzle of honey

Preparation

  1. In a non-stick pot over medium heat, toast the barley flour until it slightly deepens in color and becomes fragrant.
  2. Add the milk and whisk continuously over medium heat until the mixture begins to thicken.
  3. Stir in the ground cinnamon and continue whisking until the porridge coats the back of a spoon and becomes thick and creamy.
  4. Pour the talbina into serving bowls.
  5. For the topping, heat the ghee in a small pan. Add the diced dates and chopped nuts, and toast for 1–2 minutes until lightly caramelized and fragrant.
  6. Spoon the warm date and nut mixture over the talbina. Finish with black nigella seeds and a drizzle of honey, if desired.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
