 Carrot Cake Oatmeal Bars with Medjool Dates & Walnut Streusel 

These Carrot Cake Oatmeal Bars are soft, warmly spiced, and naturally sweetened with Natural Delights® Medjool Dates. Made with oats, almond butter, Greek yogurt, and shredded carrots, they deliver a wholesome twist on classic carrot cake. A crunchy walnut date streusel on top adds texture and caramel-like sweetness, making these bars perfect for breakfast, snacking, or a better-for-you dessert.

Ingredients

  • Walnut Date Streusel
  • 1/2 cup Natural Delights Medjool Dates, chopped
  • ½ cup finely chopped walnuts
  • ¼ cup old-fashioned rolled oats
  • 1 tbsp all-purpose flour
  • ½ tsp ground cinnamon
  • ¼ cup unsalted butter, melted
  • Oatmeal Bars
  • ½ cup smooth almond butter
  • ⅔ cup greek yogurt
  • ¼ cup maple syrup
  • 1 large egg
  • ¼ cup milk
  • 1 cup old-fashioned rolled oats
  • 1 cup oat flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • ½ tsp ground nutmeg
  • ¼ tsp salt
  • 1 cup shredded carrots
  • ⅓ cup chopped Natural Delights Medjool dates

Preparation

Preheat oven to 350F. Line a 8x8” baking pan with parchment paper.

In a mixing bowl, combine all streusel ingredients until well incorporated. Set aside.

In a large mixing bowl, whisk together almond butter, yogurt, maple syrup, egg, and milk until creamy. Fold in oats, oat flour, baking powder and soda, spices, and salt until a smooth batter forms. Fold in carrots and dates.

Pour batter into prepared baking pan. Top with streusel. Bake for 25-30 minutes until toothpick inserted comes out clean (a few moist crumbs are ok). Cool for 10 min in the pan before carefully transferring to a wire cooling rack.

(Optional): serve with icing. Enjoy!

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
