Chicken Nachos

Standard nachos are a thing of the past. It’s time to add a little sweet & spicy to them!  Yuca chips are made from cassava. They’re crunchy and salty and make the perfect base for these Yuca Chip Chicken & Medjool Date Strips with Tajín Oven Baked Nachos.  The Medjool Date Strips with Tajín add sweetness and spiciness to this dish and allow the chicken, black beans, tomato, green onions and cheese to blend together perfectly.

Ingredients

  • Natural Delights Medjool Date Strips with Tajín
  • Yuca chips
  • 1 Rotisserie Chicken - shredded
  • 1 can Black Beans - seasoned
  • 1 large Tomato - diced
  • Green Onions - chopped
  • Mexican-style shredded cheese
  • Cilantro - minced & Sour cream (optional)

Preparation

  1. Add cooking spray to oil a casserole dish or sheet pan.
  2. Place yuca chips at the bottom of the casserole dish and sprinkle the first layer of cheese.
  3. Sprinkle Natural Delights Medjool Date Strips with Tajín.
  4. Sprinkle beans, tomatoes, and green onions and cover with cheese again.
  5. If using a casserole dish, repeat steps 2 or 3 more times until reaching nearly the top of the dish. If using a sheet pan, do 1 to 2 layers.
  6. Bake in the oven at 375 degrees F for 10 minutes or until cheese is melted.
  7. Remove from the oven and add more cheese if desired and set back in the oven to broil 1-2 minutes.
  8. Once broiling is complete, top with cilantro and sour cream or topping of choice.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
