Date Horchata

YIELD: 8-10 servings

This recipe puts a unique spin on a traditional Mexican horchata by adding Medjool dates. It will have you wanting to refill your cup.


  • 1 ½ L Water
  • 1 ½ Cup White Rice
  • 2-3 Cinnamon Sticks
  • 1 large Can of Sweetened Condensed Milk
  • 1 Cup Milk
  • 6-7 Pitted Natural Delights Medjool Dates (soaked in hot water and drained)
  • 1 tsp. Vanilla Extract
  • 1 tsp. Ground Cinnamon


  1. In a large bowl add the cinnamon sticks, rice and water allow to soak overnight (or no less than 4 hours).
  2. Pour hot water over dates in a large bowl and allow to sit for 10 minutes before draining.
  3. Remove the cinnamon sticks and add rice and water to a high speed blender.
  4. Add remaining ingredients and blend on high for 2 minutes.
  5. Pour through a fine mesh strainer, nut milk bag or cheese cloth into a pitcher.
  6. Serve over ice.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
