Date Rice Krispie Treats

  • Date Paste
  • 12oz Medjool dates, pitted
  • 2 tablespoons warm water
  • 1/4 teaspoon ground cardamon
  • Other
  • 4oz of unsalted butter
  • 5 cups of Rice Krispie cereal
  • 1 cup finely crushed mixed unsalted nuts
  • 1/2 cup toasted sesame seeds


  1. In a food processor, add the pitted Medjool dates along with the water and cardamom. Pulse on low for about a minute until it resembles a paste. Set aside.
  2. In a small pot, melt the stick of butter and add the date paste to this. Mix well before pouring in the Rice Krispie cereal. Stir everything together for a few minutes on low heat until it is well incorporated. The cereal should be coated in the date butter mixture.
  3. In a 9x11 greased Pyrex baking dish, scatter the sesame seeds at the bottom in an even layer. Top that off with the Rice Krispie mixture. Then, add the finely crushed nuts on top of that and press down well into the cereal so it will stick. You can use plastic wrap to cover the top and press down on the plastic onto the nuts and cereal treats.
  4. Cover and let this chill for at least 3 hours until it cools and holds its shape. Cut into 9 or 12 squares, depending on your preference in size. Enjoy!

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
