Dessert-Inspired Overnight Oatmeal

Ingredients

  • Pistachio Pudding
  • 1 cup (240g) almond milk
  • 1/3 cup (40g) pistachios
  • 1/4 tsp matcha powder (for color, optional)
  • 1 tbsp maple syrup
  • 1/8 tsp almond extract
  • Pinch of salt
  • 1/2 cup (45g) rolled oats
  • 2 tbsp (20g) chia seeds
  • Coconut Mini Medjools + raspberries
  • Espresso Brownie Chip
  • 3/4 cup (180g) almond milk
  • 1/4 cup (60g) brewed espresso (1 double shot)
  • 1 tbsp maple syrup
  • Pinch of salt
  • 1 tsp cocoa powder
  • 1/2 cup (45g) rolled oats
  • 2 tbsp (20g) chia seeds
  • 2 tbsp (25g) chocolate chips
  • Cacao Pecan Mini Medjools + chocolate chips
  • Salted Caramel
  • 1 cup (240g) almond milk
  • 2 pitted (~35g) Medjool Dates
  • 1/2 tsp vanilla extract
  • 1 tbsp maple syrup
  • 1 tbsp (16g) almond butter
  • Pinch of salt
  • 1/2 cup (45g) rolled oats
  • 2 tbsp (20g) chia seeds
  • Sweet & Salty Almond Mini Medjools + banana slices

Preparation

Pistachio Pudding

1. Blend almond milk with pistachios, matcha, maple syrup, almond extract, and salt on high.

2. Strain to remove any small nut chunks (optional)

3. Pour into a jar, add chia and oatmeal, cover and shake to combine.

4. Refrigerate overnight.

5. The next morning, top with Coconut Mini Medjools and fresh berries. Enjoy!

Espresso Brownie Chip

1. Combine all ingredients in a jar. Cover and shake to combine.

2. Refrigerate overnight.

3. The next morning, top with Cacao Pecan Mini Medjools and chocolate chips. Enjoy!

Salted Caramel

1. Blend almond milk with Medjool Dates, vanilla, maple syrup, almond butter, and salt.

2. Strain to remove any small date chunks (optional)

3. Pour into a jar, add chia and oatmeal, cover and shake to combine.

4. Refrigerate overnight.

5. The next day, top with Sweet & Salty Almond Mini Medjools and fresh banana slices. Enjoy!

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber.
