 High-Protein Strawberry Japanese Cheesecake (Dairy-Free & Naturally Sweetened) 

 This viral-inspired Strawberry Japanese Cheesecake gets a nourishing upgrade with Natural Delights® Medjool dates. Made with silken tofu for a high-protein, dairy-free base and naturally sweetened with dates, this silky, creamy dessert is light yet satisfying. Blended with fresh strawberries and layered with gluten-free lemon cookies, it’s an easy no-bake treat perfect for breakfast, snack time, or a better-for-you dessert.

Ingredients

  • 10 oz silken tofu, drained
  • 6 strawberries
  • 1 tsp vanilla extract
  • Pinch of salt
  • 10-12 gluten free lemon cookies
  • 3-4 Natural Delights Pitted Organic Medjool Dates

Preparation

  1. Cover dates with boiling water to soften. Let them rest for a few minutes.
  2. Add the tofu, dates, berries, vanilla, and salt to a blender and puree until smooth and creamy. Pour into a bowl and insert cookies. Place in the fridge for at least an hour until cookies soften.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
