Easy Caramelized Chicken & Date Salad with Tahini Dressing

Healthy caramelized chicken & date salad made easy and delicious with juicy chopped dates, pecans, rotisserie chicken, and maple tahini dressing! Recipe by The Nutrition Kitchen

Ingredients

  • Salad
  • 8 Natural Delights Pitted Medjool Dates, chopped
  • 16 ounces rotisserie chicken, shredded/chopped
  • Dash of coconut oil
  • 1/4 cup chopped pecans
  • Optional Add-ins: sliced avocado, feta or goat cheese
  • Tahini Dressing
  • 1/2 cup sesame tahini
  • 2 tablespoons date syrup (or maple syrup)
  • 1 teaspoon dijon mustard
  • 1 tablespoon lemon juice
  • Water or nut milk to thin

Preparation

  1. First, caramelize the chicken and dates by placing in a skillet with coconut oil over medium-high heat. Stir until the chicken looks slightly crisp and mix in the date syrup. Reduce heat and continue to stir for a few minutes. Remove from heat.
  2. Make the tahini dressing by whisking all the ingredients until combined. Slowly add in nut milk or water until desired texture is reached. I used about 1/4 cup of liquid. You will have extra leftovers!
  3. Place arugula in a large bowl and top with chicken + date mixture, pecans, and optional add-ins. Drizzle with tahini dressing and enjoy!
  4. Enjoy!

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
