Grilled Salmon with Chipotle Date Sauce

Ingredients

  • 2 Natural Delights Pitted Medjool Dates
  • ½ cup plain Greek yogurt
  • ¼ cup mayonnaise
  • 2 chipotle peppers from a can of chipotles in adobo sauce
  • 1 garlic clove, peeled
  • 1 teaspoon olive oil, plus more for grill
  • 1 teaspoon fresh lime juice
  • 4 salmon fillets
  • Salt & pepper to taste

Preparation

  1. In a food processor or blender, add in the dates, yogurt, mayo, chipotle peppers, garlic, olive oil, and lime. Season with salt/pepper to taste and blend until smooth.
  2. Reserve half of the sauce for later and brush the other half over each salmon fillet. Place the salmon on the grill and cook on each side for about 5 minutes or until the salmon is cooked to your liking.
  3. When done, add the salmon to a serving plate and drizzle the remaining sauce on top. Garnish with fresh herbs, if desired, and enjoy!
